Stuffed Mushrooms | Recipe
Since last year I have tried to cut out red meat and eat healthier. It has proved harder than I thought it was going to be but I thought in 2016 I would take charge and start creating some recipes that would entice and encourage me more.
Sometimes I post the recipes on my snapchat while I am cooking to show the step by step process but as you may know, snapchat only lasts for 24 hours. So by popular demand I will start to post some of the recipes on here as I go along.
My lastest recipe was Stuffed Mushrooms which I have listed the ingredients and method below. Obviously you can stuff the mushrooms with whatever you prefer and use your own seasoning. I just made this recipe up as I went along but I'm also sure you can find some adapted version on google. Most of the ingredients I actually bought from Lidl but you can buy similar in other stores. I have selected similar products at Tesco store for you.

INGREDIENTS
(Serves 2 as a snack or 1 as a main meal)
- 2 Portobello Mushrooms (Tesco)
- Handful of spinach (Tesco)
- 2 tablespoons of fruity moroccon style spiced cous cous (Tesco)
- 1/4 red onion (Tesco)
- 4 cherry/baby plum tomatoes (Tesco)
- 1/4 red pepper (Tesco)
- 1/4 green pepper (Tesco)
- Specks of goats cheese - optional (Tesco)
- Rocket Salad and salad dressing to garnish (Tesco)
Seasoning I used:
Salt, Black Pepper, Paprika, All Purpose, Garlic Powder, Thyme


METHOD
1. Preheat oven to 180°C
2. Put foil ontop of a baking tray and sprinkle olive oil over it. Peel mushrooms and place them on the foil and sprinkle more olive oil on top.
3. Season mushrooms with seasoning listed above (plus or minus to suit your taste) and put in pre-heated oven to cook.
4. Wash and cut vegetables into small chunks and fry lightly in a heated frying pan. Add spinach once the vegetables have softened. Season using same seasoning (more or less to suit your taste) Then add the two spoonfuls of couscous and stir alltogether.
5. Remove frying pan from heat and leave to the side. Take baking tray with mushrooms out of the oven. Spoon filling inside/ontop of the mushroom until all the filling is used up.
6. (Optional) Place small pieces of goats cheese ontopof the filling and place back in the oven for 10 minutes.
7. Serve mushroom on to plates or serving board and garnish with salad or any side of your choice.
8. Then you're ready to eat! :)
