Mini American Pancakes
From I've been a child I have loved pancake day! Running back from school and counting down the hours til after I had dinner so that I could make them with my mum. Now that I am older I get the chance to experiment with different ideas and flavours the way I want and on a plus side I don't just have to wait until pancake day to make them!
Once again I did document this process on Snapchat but for those that don't have me on there, then here is the breakdown of the process and recipe.
I usually make crepe style pancakes but I wanted to try something different, so with the help of my friend Stacey I made american style pancakes in minature form.

INGREDIENTS
(Prep: 10 mins - Cook: 35 mins - Makes: 15 mini pancakes approx.)
- 200g self raising flour
- 1tsp baking powder
- 1 egg
- 300ml milk
- 4 tbsp sugar
- A pinch of salt
- A little oil or butter for cooking
- Nutella
- A pack of strawberries (washed and sliced)
- Icing sugar to decorate

METHOD
1. Mix together the flour, baking powder, sugar and a pinch of salt into a large bowl. In a seperate bowl, beat the egg with the milk. Then make a well in the dry ingredients and whisk in the milk to make a thick and smooth batter.
2. Heat approx. a tsp of oil or a knob of butter in a non stick frying pan. Using a ladle, drop 3 spoonfuls of batter into the frying pan (avoid making them too big so that they don't spread too wide and touch). Cook for about 3-4 mins on one side until golden brown and small bubbles appear on the surface and use a spatula to flip onto the other side to cook for another 3-4 mins.
3. Place cooked pancakes onto a baking tray and put inside a preheated oven to keep warm while you continue cooking the rest of the batter.
4. Serve on a plate with nutella and strawberries. Dust with icing ssugar for decoration.
