Blueberry Pancakes

I have found this Vegan transition a lot harder than I thought it was going to be and don't know if I will ever fully get there but from time to time I will experiment with the odd recipe to see how it turns out. So I decided to make some vegan blueberry pancakes - which meant no eggs or dairy milk!

 

As always I did document this process on Snapchat but for those that don't have me on there or want to try out the recipe for yourself then here is the breakdown of the process and recipe.

INGREDIENTS

(Prep: 10 mins - Cook: 35 mins - Makes: 5 large panckakes approx. or 8 medium pancakes approx.)

 

- A handful of blueberries

- 200g self raising flour

- 1/2 tsp baking powder

- 1 banana (egg alternative)

- 300ml vanilla soya milk (dairy milk alternative)

- 1/4 cup caster sugar

1/2 tsp cinnamon

- 1/2 a capful of vanilla essence (optional)

- A pinch of salt

- A little oil or butter for cooking

- Maple syrup

- Nutella (optional)

- A pack of strawberries & rasperries to decorate (optional)

- Icing sugar to decorate (optional)

 

 

METHOD

1. Pre-heat oven to around 100°c. In a bowl, mix together the flour, baking powder, sugar, cinammon and a pinch of salt into a large bowl. In a seperate bowl, peel and mash the banana to add to the dry mix. Then make a well in the dry ingredients and gradually stir in the soya milk to make a thick and smooth batter.

 

2. Wash and then chop half of the blueberries and stir into the mix then add the vanilla essence to complete the batter mixture.

 

3. Heat approx. a tsp of oil or a knob of butter in a non stick frying pan. Using a large ladle, drop a small spoonfulof batter into the frying pan to test the mixture. If all is okay pour a full size portion into the frying pan (Added tip: use a cake tin to make pancakes perfectly round). Cook for about 3-4 mins on one side until golden brown and small bubbles appear on the surface and use a spatula to flip onto the other side to cook for another 3-4 mins.

 

4. Place cooked pancakes onto a baking tray and put inside preheated oven to keep warm while you continue cooking the rest of the batter.

 

5. Serve pancakes on a plate with mayple syrup and decorate with strawberries, raspberries and icing sugar as an added extra.
